Pot Roast Diva!

WHAT! My first attempt at pot roast was a BIG success! Hooray! AND after realizing how many people I have to feed and how small my crock pot is…my darlin’ husband bought me a HUGE 7 quart crock pot today! He loves me! Woot! What I loved most about the dinner was that we were all together. Amanda and Jason came over and we had a family dinner – except for Johnny who ate in front of his computer…but came out often for seconds and thirds! ha ha!

I am so blessed to have such a wonderful family. I just couldn’t stop grinning because I made a great meal (and I’m soooo cooking challenged) and I had my family all together. I love them all so much. Amanda and I decided that we’ll do family dinner one Sunday a month…I can’t wait to think of something cool to cook for next month!

As for next Sunday…it’s just us…so I’m heating up the crock pot for some chicken and dumplings. Should be fun!

Here’s the recipe for tonight’s yummy meal…

Ingredients:

  • Pot Roast – ours was 2.7lbs and BARELY big enough for 7 people (so I’ll go bigger now that I’ve got a bigger crock pot)
  • Potatoes (I used regular potatoes but you can use baby potatoes or red potatoes)
  • Onion (sliced)
  • Baby Carrots (1 bag)
  • 1 packet dried beef gravy mix
  • 1 packet zesty Italian dressing mix
  • 1 packet ranch dressing mix

Directions

  1. Cut the onion and layer it on the bottom of the crock pot
  2. Clean and quarter your potatoes and lay them on top of the onions
  3. Dump the carrots on top of the potatoes
  4. Place the meat on top of the vegetables
  5. Pour all three dry seasoning packets on top of the meat
  6. Cover with water
  7. Cook in Crockpot on Low for 8-10 hours (however, after 5 hours we turned the heat up to high for the last 3 hours because the meat was thick and still really red and we wanted to eat at 6:30pm! So just keep an eye on the meat and adjust the temp as necessary)

That’s it. The kids raved…everyone ate heartily…and I feel all culinary and stuff! Woot!
