Chicken Fried Rice

I’ve really decided that I need to learn to cook better meals for my family…so I’ve tried to find simple recipes that taste good. I think this one is a winner! Chicken fried rice. Here’s what it looked like when I made it…

Here’s the recipe…
Name of Dish: Chicken Fried Rice
Ingredients:
4 cups cooked white rice
3 eggs
1 bag frozen peas and carrots
2 cans of chunked chicken breast (drained) – or you can cook and cube chicken breasts, but I’m too lazy for that
Diced onion (optional)
Soy Sauce
Sesame Seed Oil
Vegatable Oil
Salt & Pepper
Garlic Powder
Directions:
Cook the white rice in a rice cooker
Cook the frozen peas and carrots per instructions on the packet
Put 2 tbs of vegetable oil in a wok (or other frying pan)
In a small bowl mix the 3 eggs with salt, pepper, and garlic powder to taste
Scramble the egg in the hot wok
Add in the cooked peas and carrots
Add in onions (if you chose)
Saute all together for a few minutes then pour into a bowl
Clean wok and add another 2 tbs of oil
Add in rice from the rice cooker
Add in both cans of chicken breast chunks
Pour on Soy Sauce and mix well (add as much or as little soy sauce as you like – it’s all about your personal preference. A little goes a long way so just be careful as you add it)
When the rice is the color and flavor that you like, drizzle just a little sesame seed oil over the rice and mix well again
Pour rice mixture on top of veggies and mix well
Serve hot
I had to do this in stages because my wok wasn’t big enough to hold the rice and the veggies at the same time.
This made 12 servings – so cut the ingredients as needed for fewer people.
More About This:
You can add any pre-cooked meat that you want – beef, shrimp, etc.
You can also add any other vegetables you’d like.
This recipe is great when you reheat the next day – so I made a lot and the boys had it for lunch the next day…just heat in the microwave
