Love some enchiladas! And they are so easy to make! Recipe in post.
Ingredients:
- 3-4 cups of cooked shredded chicken (you can use cooked rotisserie chicken or canned chicken)
- 1 medium onion, chopped
- 1 cup of sour cream
- 1 can corn – drained
- 1 can black beans – drained and rinsed
- 1 small can green chilies
- 2 large cans of enchilada sauce
- 3 cups of shredded cheese
- 8-10 large flour tortillas
- sliced black olives and green onion (garnish)
Recipe:
- Preheat oven to 350 degrees
- Mix chicken, sour cream, onion, corn, beans, chilies, and 1 cup of cheese in a large mixing bowl
- Add 1 cup of enchilada sauce to the mixture
- Cover the bottom of a 9×13 glass baking dish with enchilada sauce
- Spoon mixture into tortillas, roll them up, and lay them in the dish
- Cover with remaining sauce
- Sprinkle top with remaining 2 cups of shredded cheese
- Add olives and green onions to top of dish
- Bake for 30 minutes
