Baked Fajita Bar

Served up a baked fajita bar for dinner. Super yummy! Recipe in post.

Ingredients:

  • 4-6 chicken breasts cut into thin strips
  • 1-2 pkgs of McCormick Fajita seasoning
  • 1 tbs of olive oil
  • 1 green pepper – cut into strips
  • 1 yellow pepper – cut into strips
  • 1 red pepper – cut into strips
  • 1 orange pepper – cut into strips
  • 1 large onion – cut into strips
  • 1 lime
  • Garlic Powder
  • Paprika

Recipe

  1. Put chicken, olive oil, fajita seasoning in a zip lock bag
  2. Add garlic powder and paprika to taste
  3. Close bag and mix it all together to season the chicken (you can do this the night before and let chicken marinade overnight if you have time – but it’s not required)
  4. Cut veggies into strips and place in greased 9×13 pan
  5. pour chicken and seasoning on top of veggies and mix until everything is coated well in seasoning (if it seems a little dry, add more olive oil and mix thoroughly)
  6. Place in oven and cook for 35-45 minutes until chicken is cooked through
  7. Squeeze lime juice over dish and stir well
  8. Serve in flour tortillas and provide sour cream, pico de gallo, salsa, shredded cheese, jalapenos, refried beans, Mexican rice, chopped cilantro, and any other sides you like
